Ingredients:

 

Salt: 1-1/2 teaspoons
Chicken: 1 kilograms
Chopped onion: 2
Yogurt: 1 cup
Garlic: 6 cloves
Ghee: 1/2 cup
Bay leaf: 1
Mixed whole spices: 1 tablespoon
Button red chili: 12
Poppy seeds: 1 tablespoon (heaped)
Whole coriander seeds: 1 ½ tsp

 

Method:

To start cooking roghni qourma at first you need to grind button red chilies, garlic cloves, poppy seeds and whole coriander seeds. Now heat ghee in a deep pan and fry chopped onion then add the bay leaf, mixed whole spices and add the ground masala paste you already prepared and fry well until ghee comes on top. Then add beaten yogurt with chicken and fry well for 10 minutes. After that add 1-cup water and add salt, cover the pan and simmer on low flame. Allow it to cook until chicken tender and thick gravy remains. Dish out and garnish with Julian ginger and coriander leaves. Enjoy with roghni naan.
