Crispy Coconut Cookies Recipe

Desiccated coconut:  3 cup

Butter: 1 cup

Castor Sugar: 1.5 cup

Flour: 0.5 cup

Egg: 1

Baking Powder: 1.5 teaspoons

Semolina: 0.5 cup


First of all mix together butter and sugar and after mixing them properly add egg and then mix them all three together. In separate pan mix flour, desiccated coconut, semolina and baking powder. Now mix them together with the butter, sugar and egg mixture until firm dough is formed. Now put this dough covered properly in refrigerator for at least half an hour. It will make the dough a lot more firm and will help you to give it biscuit shape easily. Take it out from the refrigerator after half an hour time and then make small balls of the dough and put them in an already greased baking tray. Bake them for 10 minutes in a preheated oven at 225 degree Celsius. In ten minutes the balls will turn the cookie shape and will become light golden in color. Take them off the oven and let them cool down at room temperature.

After that they are ready to be served to your guests or family members. Enjoy them with tea or coffee or as it is. You and your family or guests will definitely love these crispy coconut cookies. Don’t forget to garnish them with desiccated sugar. It will give them a lot more beautiful look.
