Subha mein chane saaf kar ke dholain aur in mein soda daal kar inhain pani mein bhigo dain. Shaam ko namak mila kar chane ubalne ke liye rakh dain, pani chanon mein itna rahe ga keh isi mein gal jayain. Chane narm ho jayain to patili chulhe se utar lein. Ab aaloon ko bhi boil kar lain, aikbariplate mein chole nikal lain aur isi mein aaloo bhi daal dain. Piaz ke bareek lache kaat kar dho lain, aur aaloo cholon mein mila dain. Tamatar gol gol aur hari mirch bareek kaat kar iss mein shamil kar lain. Ab surkh mirch aur pani mein bhigoyi hoyi imli bhi cholon mein daal dain oper se lemon nichor dain, chat pate aaloo choley taiaar hain.

Surkh mirch kati hoyi                   1/2chamcha

Piaaz (onion)                           1 piece

Ghee/oil                                hasbe zarorat

Namak (salt)                            1 spoon

Adrak, lehson (garlic, ginger pest)     1 spoon

Sufaid zira                             1 spoon

Green chili                             2 pieces

Hara dhanya                             chand pattey

 

Tarkeeb

Daal chun kar saaf kar lein aur dho kar aik ghanta ke liye bhigo dain. Daal 1 hour/ghanta ke liye bhigo dain. Daal bheegh kar naram ho jaye gi, ab daal ko mota mota pees lein. Daal mein surkh mirch, namak, adrak, lehson, sufaid zira daal dain. Piaz, hari mirch, aur hara dhanya bhi bareek kaat kar shamil kar dain. Karahi mein ghee/oil garam karain aur daal ke chote chote pakore bana kar dalte jayain. Madhim aanch par pakore tale jayain gay to andar se bhi sahi tareh se pak jayain gey aur kur kurey bhi rahain gay, pakore halki badami rungat ikhteyar kar jayain to karahi se nikal lain. Daal mash ke nehayat khasta pakore taiyar hain.
