Tarkeeb:

Aik bartan main oil garam kar k is main piyaz fry kar lain , ab is main timatar , hari mirchain (bareek kaat kar) namak, mirch, haldi, aur dhaniya daal kar chamach chalain , ab is main qeema daal kar bhoonain . waqfe waqfe se pani ka cheenta dete rahain . jab qeema gal jaye to achi tarah paani khushk kar k 5 mint k liye dam par rakhain . Aalu jo darmiyanay size k hoon . in k chilkay utaar kar is k opper se dhakkan k manind aik hissa kaat lain . dhakkan aik taraf rakh kar aaluon k andar se gooda nikaal kar inhain aik botal si bana lain . Isi tarah saarey Aalu khaali kar lain . ab deep fry karain aur golden brown hone per nikaal lain . Aalu ka jo hissa khaali kerne per bacha hai isey bhi bareek kaat kar tal lain . Tayyar shuda qeema talay huay Aaluon main bhar lain is per khoob achi tarah dhakkan jama kar dhagey se mazbooti se baandh dain . alichi=4 se 5 adat

garm masala=1/2 t sp

adrak lehson ka paste=2 t sp

Tarkeeb:

lal mirch,alichi,zeera ko rost kar lein tawe par phir is ko pis lein is main namak,lehson adrak ke paste,garm masala dal kar mix kar lein or is main 1 cup pani dal kar mix kar lein

dosri taraf ek decki main pyaz(onion) ko lal kar lein or is main meat ko bhi dal dein or meat ko golden kar lein phir is main woh sare masale dal dein or bhone phir is main dehi or flour dal dein or hilayein phir is main itna pani dalein ke ye gal jaye or phir pash karein.

 

Aamar Tarsi Gosht Recipe 

 

AJZA:

Gosht beghair haddi     ½ kilo

Aloo (Potato)                 3 adad

Matar (pea)

Hara dhanya (coriander leaf)   thora sa

Tamatar (tomato)                   250 gm

Kali mirich (black pepper)      1tbsp

Coriander                                 ¾ tbsp

Chili                                          1 tbsp

Adrak (ginger)                           hasbe zarorat

Piaz (onion)                               hasbe zaiqa

Ghee hasbe zarurat

Nampak hasbe zaiqa

Tareeka:

Gosht ke aik aik inch ke chokor tukrey kar ke dho lein aur kisi saaf kaprey se khushk kar lein tamatar ke char tukrey kar lein aloo ko chil kar gol qatle kat lein hari mirchon ke chey chey tukrey kar lein. Piaz chil kar iss ke bhi aloo jaisey chlley kat lein matar ko chil kar daney nikal lein. Aikbarikarahi mein ghi daal kar aanch par rakh dain. Ghee garam ho jaye to iss mein aloo dal dein aloo narm par jayain badami na ho to ghee se nikal lein phir tamatar dal dein. Aik ya do minute baad tamataron ko bhi ghee se nikal lein aur isi ghee mein gosht dal dein. Gosht ko bhi ghee se nikal lein aur karayi ko aanch se utar lein. Aik patili mein gosht kali mirch danya, adrak, namak, ghee aur pani dal kar aanch par rakh dain pani khushk ho jaye to achi tarah bhun kar gosht galney ke andazey ka pani dal dein.

Gosht aadh gala ho jeye to matar dal dein. Gosht gal jaye aur thora sa pani ho to aloo, piaz, tamatar hari mirch aur hara dhanya dal kar das minute ke liye dam par dalein.

Tarkeeb:

sab sey pehley gosht ki jes size ki aap chahtey hain booteyan bana lein.onion key chelkey (uper side) alag ker key 1 inch square key pieces bana lein. en ko oil main red ker lein. phir gosht, chillies, tomatos, haldi, aur salt dal ker bhoonein. zara sa pani shamil ker lein. aur ouper dhakkan dey ker halki aanch per pakney dein. 45 minutes key bad mazeed halki ker dein.

es dooran lehsan ko bareek kat ker es main shamil karein. after some time jab gosht gal jaey tou bartan ko aag sey utar lein. aur dish main nikal ker ””salad” key sath pesh karein, ya khud estemal karein.

umeed hai aap sab issay pasand karein gey, aur pakaein gay aur phir mujhe khelayein ge.

AJZA:

Gosht ya qeema                             1/2 kg

Chaney ki daal                             1/2 kg

Pisasabid dhanya (coriander powder)       1 tbsp

Sabit lal mirch (red chili)                10

Lehsan ke jawey (clove)

Namak (salt)                               1 tbsp

Tareeka:

Metod gosht mein tamam cheezen dal kar ubaalne ke liye rakh dain jab gosht aur dal gal jaye to iss ko achi tarah pees lein phir pise huye qeemey mein aik anda, ½ tbsp garam masala, ½ sp sukha podina dal kar ahci tarah mix kar lein.

Tareeka:

Piaz ko bareek kaat kar oil ya ghee mein fry kar lain, jab sunahi mayal brown ho jayein to iss mein se adhi piaz aur oil nikaal kar alaihda rakh lain baaqi piaz mein gost, adrak, lehsan haldi, namak, aur baqi ka sara masalha pees kar aadha masalha daal dain jab pani khushk ho jaye to iss mein dahi phaint kar dalain, besan aur aatey ko tawey par bhoon lain phir iss ko aik cup pani mein ghol lain, jab nehari mein achi tarah boil aaney lage to iss mein ghula hua aata aur besan daal kar achi tarah pakayain phir chulah ki aanch dhimi kardain. Baqi ka masalha bhi daal dain, ab iss mein garam masalha daal dain aur iss ko 3 or 4 ghantey key liye chor dain, aakhir mein alihda rakhey hoe piaz aur ghi ka baghar lagayain ab aap ki nehari ki dish taiyaar hai. Haddiyon ko ubaal kar in ka guda nikal lain aur khaney se qabal nehari mein daal dain.

Sizzling Steak Recipe

AJZA:

Beef undercut                250 gm

Salt                         1/4 tbsp

Sufaid dakhni mirch          1/2 tbsp

Mustard powder               1 tbsp

Vaster sauce                 1 tbsp

Oil                          2 tbsp

Steak sauce ya brown sauce   2 tbsp

Aalo, gajar, mater           hasbe zarorat

Tareeka:

Gosht ke tukre ko halka halka kaat kar zara patla kar lein aur phir is par namk pisi hui mirch, musterd powder aur vaster sauce mila kar 10 se 15 minute ke liye rakh dein, oil garam karein aur is mein gosht daal kar darmiani aanch par fry karein jab pani khushk ho jaye to brown sauce daal kar pakayain. Aalo, carrot, aur matar ko boil kar ke halka tal lein, 1 seasler le kar garam kerein, jab seasler khub garam ho jaye to tamam sabziyan aur steak ko is mein daal kar garam garam pesh karein.

Note: seasler se kia murad hai? yeh istalah aam tor par khawateen nahi jantein , yeh lohe ki aik phaili hui plate hoti hai jo aam tor par bazaar mein mil jati hai, is ke sath aik tray aur bhi hoti hai jis par lakri ke handle lage hote hain lohe ki plate ko garam kar ke is tray mein rakh dete hain, is se khana buhat deir tak garam rehta hai.

Khawateen seasler ka kam kisi aluminum ua tamchini ki plate se bhi le sakti hain.

AJZA:

Gaye ka kosht=adha kilo

Bread karamz=adha cup

Lehsan,Piaz or tamator,shimla Mirch=2 2 adat

Namak=1Tbs

Tamatar paste=1/4 cup

Mozila Cheeze slice=250 gram

Tarkeeb:

* Murghi ko lambe pieces main kat lein, ab murghi main adha parrika, namak aur kali mirch shamil kardein.

Ab karahi main aik khaney ka chamach maakhan daal kar halki anch per rakhein.

Ab karhai main murghi dalein aur 4 mint tak pakney dein, ab pyaaz shamil kar ke brown honey tak pakaein.

Ab bacha hoa Paprika daal kar 30 secnds tak tak pakaein.
