You realize that that you need to loose weight, but the mere word “diet” scares you, does it? You are 100% loyal to your taste buds and can’t deny them their share of tasty food. Don’t worry, there are lots of low calorie recipes that will not only satisfy your beloved taste buds but also keep you healthy and fit.
You could try the grilled chicken breasts with yellow tomato sauce. Its a very healthy option, very filling and tasty. You require-
• Yellow tomatoes- 4
• Extra virgin oil- 1 ½ tbsp
• Garlic cloves- 2, minced
• Balsamic vinegar- 1 tbsp
• Fresh basil- chopped, 3 tbsp
• Salt- ¾ tbsp
• Black pepper- ¼ tbsp, freshly ground
• Boneless, skinless chicken breast halves- 4
• Italian parsley flat leaf- 2 tbsp, chopped
• Fresh thyme- 1 tbsp, chopped
Coat the cooking grill or broiler pan with the cooking spray and place it on the heat source. Grill the tomatoes till the skin starts to blacken. To loosen the skin, transfer it to a plastic wrapped bowl. Next, in a frying pan heat the olive oil over medium heat. Add garlic to it and sauté for about a minute and set aside. Peel the grilled tomatoes. In a blender add the tomatoes, the garlic with oil and the vinegar. Blend it well. To that add the basil, salt and the pepper. That makes your yellow tomato sauce.
Now take the chicken breast, sprinkle it with the remaining salt and pepper. In a dish stir the parsley, thyme and basil. Dip the chicken on this mixture and grill till brown on both sides. Serve hot with the tomato sauce.
Roasted salmon with maple syrup is yet another low calorie option. You would need
• Maple syrup- ¼ cup
• Garlic clove- 1, minced
• Balsamic vinegar- ¼ cup
• Salmon- 2 pounds(6 fillets)
• Sea salt- 1 tbsp
• Fresh black pepper- 1/8 tbsp
• Mint for garnish
Heat the maple syrup, vinegar and garlic over low heat. Separate half the mixture and use the other half for basting. On the baking sheet place the salmon, skin side down. With the maple syrup mixture, brush the salmon. Bake well. Top the baked salmon with the remaining maple syrup and garnish with mint before serving.
You could try the Garden Pasta Salad too. Cook pasta is salted boiling water. Mix mayonnaise, yogurt, oil, garlic, and salt pepper till the mix is smooth. Toss the cooked pasta in it and ensure that the pasta is well coated with the mix. Add tomatoes, olives, cherry, carrots and basil to the cooked meal. Your delicious garden pasta salad is ready to be served.
