Eid ul Fitr Food Recipes: Badshahi Kabab Recipe

Mince: ½ kg
Ginger: 2 inch chopped piece
Garlic chopped: 1 tablespoon
Onion: 1 large
Green chilies: 8
Handful of coriander and mint leaves: chopped
Cashew nuts: 15 grinded
Chili powder: 1 teaspoon
All spice: 1 teaspoon
Salt: 1 teaspoon
Bread: 2 slices soaked with 3 tablespoons of milk plus 2 tablespoons of malai or cream
Saffron essence: A few drops
Bread crumbs: As required
Eggs: 2 to 3
Oil: For deep frying
Boil mince with salt and half cup of water till tender and dry. Heat 3 tablespoons of oil in a pan.  Add chopped ginger garlic, chopped onion and green chili. Fry them all till they turn soft. Drain and add cashew nuts and grind to a paste along with mince. Mix them all well. Add coriander and mint leaves, all spice, chili powder, saffron essence, soaked and mashed bread. Now mix all well and make equal size balls from mixture and form into kebabs. Roll into breadcrumbs. Dip in beaten egg. Deep fry in hot oil until golden brown. Serve with ketchup or chili garlic sauce. If you like Eastern flavor, you can serve with mint chutney or sauce.
