Eid Ul Fitr Food Recipes: Zafrani kheer Recipe

Milk: 2 ½ kilograms
Rice: ½ cup (heaped)
Sugar: 1 ½ cups
Cardamom powder: 1 teaspoon
Saffron: ½ teaspoon
Almonds & Pistachio (blanched & grinded): ½ cup

Silver paper: For garnishing

First of all, wash half cup rice and soak them for 2 hours. After 2 hours, remove extra water and grind them in a grinding machine.  Take a deep pan and cook milk until it starts boiling. At this stage add grinded rice and keep on stirring. Do not cook on high flame. Let the milk and rice cook together. After cooking for 25 to 30 minutes on low flame, rice will tender. At this stage, add sugar. Do not stop stirring and continue with that until milk starts getting thick. Do not leave it unattended. Now add green cardamom powder, almonds, pistachio, and mix well. Lastly add saffron and take it off the flame. Allow it to cool down. Pour it into the serving bowl and garnish with nuts and silver paper. Cool it at room temperature and then shift it to the refrigerator. Serve cold.
